Smoked Salmon Lasagna Recipe
Found this at Better Homes and Gardens, and although it takes awhile to prepare, it sounds worth it.

Ingredients
  • 12 dried lasagna noodles
  • 1/3 cup butter
  • 1/3 cup all purpose flour
  • 4 cups fat-free milk
  • 1/2 teas. salt
  • 1/2 teas black pepper
  • 1/4 cup finely shredded parmesan cheese (1oz)
  • 1/4 cup shredded swiss cheese
  • 2 tablespoons dry sherry1 1/2 cups finely shredded Percorino Romano cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Provolone cheese
  • 1/2 cup shredded cheddar cheese
  • 3 large Roma tomatoes, peeled, seeded, drained and chopped
  • 8 oz sliced mushrooms or 4 oz canned sliced mushrooms
  • 8 oz smoked salmon, flaked

Directions
  1. Preheat oven to 375
  2. Lightly grease a 3 qt. rectangular baking dish
  3. Cook noodles according to package directions, drain, rinse with cold water and drain again
  4. For sauce:
  5. In a medium saucepan, heat butter over low heat
  6. Add flour and cook for 4 minutes stirring constantly(be careful not to let the flour brown)
  7. Gradually whisk in milk, salt and pepper
  8. Cook, and stir until slightly thickened and bubbly
  9. Reduce heat and stir in parmesan cheese, swiss cheese and sherry
  10. Cook and stir until cheeses are melted
  11. In a medium bowl combine remaining cheeses
  12. To assemble:
  13. Spread one-fourth sauce in prepared baking dish
  14. Sprinkle with one-fourth of the cheese mixture
  15. Layer with one-third of the noodles, one-fourth of the sauce, half of the tomatoes, half of the mushrooms, half of the salmon and one-fourth of the cheese mixture
  16. Repeat layering noodles,sauce, tomatoes, mushrooms, salmon and cheese mixture
  17. Top with remaining noodles, remaining sauce and remaining cheese mixture
  18. Bake uncovered for 50-55 minutes or until edges are bubbly and top is slightly browned
  19. Let stand 15 minutes before serving
