Supper Time Egg Scramble

- 1 cup thinly sliced onions shopping list
- 2 cups frozen hash browns shopping list
- 1 cup chopped green and/or red bell pepper shopping list
- 1/2 cup chopped fresh tomatoes shopping list
- 3/4 cup sliced mushrooms shopping list
- 1 Tbsp. canola or olive oil shopping list
- 1 tsp, canola or olive oil shopping list
- 1 cup shredded low fat cheddar cheese shopping list
- 1/2 cup finely chopped low fat ham shopping list
- 2 whole eggs and 3 egg whites, beaten shopping list
- salt and freshly ground pepper to taste shopping list
How to make it
- In a very large frying pan, sauté onions in 1 Tbsp. oil until transparent. Add salt, pepper and hash browns and cook and stir over fairly high heat until brown. Remove from pan. Add 1 tsp. more of oil, mushrooms, and peppers to pan, and stir-fry until crisp-tender. Add potato, onions and chopped ham to pan and mix all together.
- Turn heat to low and pour beaten eggs evenly over top. Cover and cook over low heat until eggs are set. Sprinkle chopped tomatoes and shredded cheese over top. Serves two very hungry people, or more with salad and bread.
