Black Bottom Pie Recipe
A great pie that is easy to prepare. It provides great flavor from the gingersnaps and the rum...oh, and, can't forget the chocolate! This is a Family Circle recipe.

Ingredients
  • 1 1/2 cups crushed gingersnaps
  • 1 stick butter (1/2 cup), melted
  • 1 envelope unflavored gelatin
  • 1 cup sugar
  • 1 Tbsp cornstarch
  • 4 eggs, separated
  • 2 cups milk
  • 2 squares unsweetened chocolate, melted
  • 1 tsp vanilla
  • 2 Tbsp rum
  • 1/8 tsp cream of tartar

Directions
  1. Blend crumbs and butter in a small saucepan.
  2. Press evenly over bottom and side of a 9-inch pie plate.
  3. Bake in a slow oven (300 degrees) for 5 minutes; cool; chill.
  4. Combine gelatin, 1/2 cup of the sugar, cornstarch and egg yolks in a large saucepan; beat until blended.
  5. Stir in milk until smooth. Cook over low heat, stirring constantly, until custard thickens.
  6. Blend 1 up of the custard with the chocolate and vanilla; pour into crust; chill
  7. Stir rum into remaining custard; chill until it begins to thicken.
  8. Beat egg whites with cream of tartar until foamy.
  9. Beat in remaining 1/2 cup sugar gradually until meringue forms soft peaks.
  10. Fold into thickened custard.
  11. Spoon over chocolate layer.
  12. Chill two hours or until firm.
  13. Garnish with whipped cream and chocolate curls, if desired.
