Spiced Caramel Prune Cake

- 1 cup prunes shopping list
- 1 cup sugar shopping list
- 3 eggs shopping list
- 1 cup oil shopping list
- 1 tsp cinnamon shopping list
- 1 tsp allspice shopping list
- 1 tsp nutmeg shopping list
- 1 cup buttermilk shopping list
- 1 tsp vanilla shopping list
- 1 1/2 cups flour shopping list
- 1 tsp baking soda shopping list
- icing ingredients shopping list
- 1 cup sugar shopping list
- 1/2 cup buttermilk shopping list
- 1 Tbsp corn or maple syrup shopping list
- 1/2 tsp baking soda shopping list
- 1/4 cup butter shopping list
- 1/2 tsp vanilla shopping list
How to make it
- Preheat oven to 300 degrees
- Cover prunes with water and bring to a boil in a pot. Boil for 8 minutes or until very soft. Drain and mash with fork
- Combine dry ingredients
- Combine all wet ingredients except for buttermilk. Add to dry ingredients and stir until combined. Add buttermilk. Add prunes and stir until just combined.
- Pour into greased 8 X 13 inch pan. Bake for 35 minutes. Do not overbake!
- While it bakes, make the icing
- Combine all icing ingredients and bring to boil in a pot. Continue to boil for about 8-10 minutes until icing is very thick and brown. Pour over hot cake as soon as it comes out of the oven. Serve warm.
