Emeril Pepperoni Fresh Mozzarella Panini

- 1/4 cup extra-virgin olive oil shopping list
- 1 tablespoon balsamic vinegar shopping list
- 1/2 teaspoon dried basil ( you can use fresh 2 teas. minced instead) shopping list
- 1 teaspoon minced garlic shopping list
- 1/4 teaspoon salt shopping list
- pinch of black pepper shopping list
- 8 slices of rustic Italian bread, sliced thin shopping list
- 8 oz of fresh mozzarella. thinly sliced (or sliced mozzarella at the local store) shopping list
- 2 oz thinly sliced pepperoni ( 18 slices ) shopping list
How to make it
- Whisk 3 tablespoons of oilve oil, vinegar, basil, garlic, salt, and pepper in a small mixing bowl, set aside.
- arrange the slice of bread flat on you're working suface and using a pastry brush, brush bread slices on one side each with your mixture you set aside earlier.
- divide the mozzarella among the 4 slices of bread and top with the pepperoni slices and then place the remaining 4 slices of bread on top.
- brushed sides down. brush the ramaining sides with a light coating of olive oil.
- and cook on a panini maker for 3-4 mins.
- if you don't have a panini maker, you can use a indoor grill or fry it like a grilled cheese.
