Emeril Pepperoni Fresh Mozzarella Panini Recipe

Ingredients

1/4 cup extra-virgin olive oil

1 tablespoon balsamic vinegar

1/2 teaspoon dried basil ( you can use fresh 2 teas. minced instead)

1 teaspoon minced garlic

1/4 teaspoon salt

pinch of black pepper

8 slices of rustic italian bread, sliced thin

8 oz of fresh mozzarella. thinly sliced (or sliced mozzarella at the local store)

2 oz thinly sliced pepperoni ( 18 slices )

Directions

Whisk 3 tablespoons of oilve oil, vinegar, basil, garlic, salt, and pepper in a small mixing bowl, set aside.

arrange the slice of bread flat on you're working suface and using a pastry brush, brush bread slices on one side each with your mixture you set aside earlier.

divide the mozzarella among the 4 slices of bread and top with the pepperoni slices and then place the remaining 4 slices of bread on top.

brushed sides down. brush the ramaining sides with a light coating of olive oil.

and cook on a panini maker for 3-4 mins.

if you don't have a panini maker, you can use a indoor grill or fry it like a grilled cheese.
