pork with cherry tomatoes

- 4 pork chops, bone-in or boneless optional shopping list
- 1 bag of cherry tomatoes washed/ stems removed shopping list
- olive oil shopping list
- salt and pepper shopping list
- 4 Tablespoons unsalted butter, softened shopping list
- 1 Tablespoon tarragon ( dried is fine) shopping list
How to make it
- Prep the pork chops by seasoning with salt and pepper to both sides.
- Mix softened butter with tarragon in small serving dish ( ramekin size).
- Toss cherry tomatoes in 1 Tablespoon of olive oil- season with salt.
- Heat saute pan with 1 Tablespoon olive oil.
- Lay seasoned chops in shimmering oil.
- Turn chops over 3-5 minutes. Down side should be browned.
- Drop Cherry tomatoes into saute pan with pork chops turned once.
- As soon as pork meets appropriate temperature in center, or until juiced run clear, pull off heat.
- Tomatoes should be soft. take back of slotted spoon and gently mash some of the tomatoes.
- Plate up: Lay pork chop on plate with a dollup of the tarragon butter. Spoon tomatoes on top.
