Ingredients
  • 2 EGGPLANTS
  • 4 EGGS
  • 2-3 CUPS BREAD CRUMBS (I MADE MINE FROM SCRATCH FROM A LOAF OF BREAD)
  • 1 CAN CHOPPED TOMATOES
  • 1 JAR TOMATO SAUCE
  • 2 MEDIUM ONIONS (PEELED & MEDIUM DICE)
  • 1 HEAD GARLIC (BROKEN UP, PEELED & EITHER LARGE DICE OR LEAVE WHOLE)
  • 5-6 TABLESPOONS OREGANO
  • 4-5 TABLESPOONS BASIL
  • 1-2 TABLESPOONS SEA SALT
  • 2 BALLS OF MOZZARELLA CHEESE
  • 1 CONTAINER OF PARMESAN CHEESE
  • OLIVE OIL

Directions
  1. PREHEAT OVEN TO 350
  2. MIX THE CANNED TOMATOES INTO A SAUCE PAN WITH THE BOTTLED SAUCE & STIR.
  3. ADD THE 2 CHOPPED UP ONIONS & THE HEAD OF GARLIC (BROKEN UP & PEELED)
  4. STIR THIS WHILE YOU'RE COOKING THE EGGPLANT SLICES.
  5. WASH & THEN SLICE TO THE SAME THICKNESS BOTH EGGPLANTS
  6. BEAT THE EGGS IN A FLAT MEDIUM SIZED BOWL
  7. POUR AT LEAST 2 CUPS OF BREADCRUMBS INTO A MEDIUM BOWL
  8. SEASON THE BREAD CRUMBS WITH 3-4 TABLESPOONS OREGANO & 2-3 TABLESPOONS BASIL & 1-2 TEASPOONS SEA SALT.
  9. I USE A CAST IRON SKILLET TO FRY THE EGGPLANT SLICES IN & HIGHLY RECOMMEND YOU DO SO TOO.
  10. PUT 4 TABLESPOONS OF OLIVE OIL IN PAN & ON MEDIUM HEAT, WAIT FOR IT TO SMOKE.
  11. USING A FORK, DIP THE EGGPLANT INTO THE EGG, THEN BREAD CRMBS & PUT ON A PLATE UNTIL OIL IN PAN HOT ENOUGH TO COOK.
  12. ****IF YOU PUT FOOD INTO COOL OR COLD OIL, THE FOOD SOAKS UP THE OIL INSTEAD OF THE HOT OIL SEALING IN THE FLAVOR OF WHAT YOU'RE COOKING.
  13. PUT THE EGGPLANT SLICES INTO THE SMOKING OIL, DO NOT CROWD THE PAN.
  14. CHECK THE HEAT, MAKE SURE IT'S ABOUT MEDIUM LOW. OTHER WISE YOU WILL BURN YOUR HARD WORK (SEE PHOTO)
  15. I COOK EACH SIDE FOR ABOUT 3 MINUTES.
  16. IF YOU'RE WORRIED THAT THERE WON'T BE ENOUGH OIL FOR BOTH SIDES THEN PUT IN EACH SLICE & TURN IT OVER. THEN LET THE SIDE THAT'S DOWN COOK FOR ABOUT 3 MINS.
  17. WHEN BROWNED, FLIP TO OTHER SIDE & LET IT COOK UNTIL BROWN.
  18. REMOVE TO A BROWN PAPER BAG COVERED WITH PAPER TOWELS TO DRAIN EXCESS OIL.
  19. I SPRINKLE A LITTLE SEA SALT ON THE COOKED SLICES.
  20. WIPE OUT THE FRYING PAN WITH A DRY CLOTH, THEN ADD 4 MORE TABLESPOONS OIL & WAIT FOR IT TO START SMOKING BEFORE YOU ADD EGGPLANT.
  21. IF YOUR EGGPLANT IS TURNING OUT TO DARK OR BURNING THEN TURN YOUR HEAT DOWN & WIPE OUT THE PAN. THE BURN COLOR WILL TRANSFER TO YOUR NEW BATCH.
  22. *****NOTE***** NEVER EVER NEVER PUT WATER ANYWHERE NEAR HOT OIL FIRE, FIRE, FIRE!!!
  23. IF YOU HAVE A GREASE FIRE PUT FLOUR OR BAKING SODA ON IT & GET A LID ON IT IF YOU CAN. DO NOT PUT WATER ON IT AS THIS MAKES IT WORSE.
  24. ********FIRE EXTINGUISHERS BELONG IN THE KITCHEN, IF YOU DO NOT HAVE ONE-----------GET ONE & LEARN HOW IT WORKS BEFORE YOU NEED IT. PLEASE!!!!!!!!!! OK?!!!
  25. BACK TO OUR COOKING........
  26. *****I TAKE A COOKIE TRAY & COVER IT WITH PAPER TOWELS TO PUT THE COOKED SLICES IN THE OVEN (TURNED DOWN TO 150) SO I DON'T EAT ALL THE COOKED SLICES.
  27. CUT THE MOZZARELLA CHEESE INTO EVEN SLICES
  28. I PUT OLIVE OIL ON THE BOTTOM OF THE BAKING PAN (I USE A BAKING PAN WITH A LID)
  29. THEN PUT A LADEL OR A CUP OF THE TOMATO SAUCE OVER THE OIL, SMEAR IT AROUND.
  30. OVERLAP THE COOKED SLICES OF THE EGGPLANT IN CIRCLES, ENDING IN THE MIDDLE.
  31. SHAKE THE PARMESAN LIBERALLY OVER THE EGGPLANT.
  32. THEN LAY THE MOZZARELLA COMPLETELY OVER THE BOTTOM LAYERS.
  33. LADEL OR POUR THE TOMATO SAUCE SO IT COVERS THE CHEESE.
  34. LAYER THE EGGPLANT, PARMESAN, MOZZARELLA & TOMATO SAUCE TO FILL BAKING DISH.
  35. JUST SAVE A LITTLE MOZZARELLA FOR THE TOP.
  36. I ALSO SPRINKLE A LITTLE OREGANO & BASIL ON TOP BEFORE I COVER & BAKE IN 350 OVEN.
  37. IF YOU'RE NOT SURE IT'S COOKED THROUGH, STICK A FORK IN THE CENTER FOR A COUNT OF 10, PULL THE FORK OUT. IF THE FORKS COLD, IT'S NOT THOROUGHLY COOKED.
  38. IF THE FORK IS WARM, THEN IT'S DONE.
  39. TAKE IT OUT OF THE OVEN & LET IT SIT FOR AT LEAST 15 MINUTES. OTHERWISE IT'S LIKE EATING NAPALM. DELICIOUS BUT HOT, HOT, HOT
  40. SHARE IT WITH THE PEOPLE YOU CARE ABOUT & ENJOY.
