Eggs Planted Parmesan

- 2 eggplants shopping list
- 4 eggs shopping list
- 2-3 CUPS bread CRUMBS (I MADE MINE FROM SCRATCH FROM A LOAF OF bread) shopping list
- 1 CAN chopped tomatoes shopping list
- 1 JAR tomato sauce shopping list
- 2 MEDIUM onions (PEELED & MEDIUM DICE) shopping list
- 1 HEAD garlic (BROKEN UP, PEELED & EITHER LARGE DICE OR LEAVE WHOLE) shopping list
- 5-6 TABLESPOONS oregano shopping list
- 4-5 TABLESPOONS basil shopping list
- 1-2 TABLESPOONS sea salt shopping list
- 2 BALLS OF mozzarella cheese shopping list
- 1 CONTAINER OF parmesan cheese shopping list
- olive oil shopping list
How to make it
- PREHEAT OVEN TO 350
- MIX THE CANNED TOMATOES INTO A SAUCE PAN WITH THE BOTTLED SAUCE & STIR.
- ADD THE 2 CHOPPED UP ONIONS & THE HEAD OF GARLIC (BROKEN UP & PEELED)
- STIR THIS WHILE YOU'RE COOKING THE EGGPLANT SLICES.
- WASH & THEN SLICE TO THE SAME THICKNESS BOTH EGGPLANTS
- BEAT THE EGGS IN A FLAT MEDIUM SIZED BOWL
- POUR AT LEAST 2 CUPS OF BREADCRUMBS INTO A MEDIUM BOWL
- SEASON THE BREAD CRUMBS WITH 3-4 TABLESPOONS OREGANO & 2-3 TABLESPOONS BASIL & 1-2 TEASPOONS SEA SALT.
- I USE A CAST IRON SKILLET TO FRY THE EGGPLANT SLICES IN & HIGHLY RECOMMEND YOU DO SO TOO.
- PUT 4 TABLESPOONS OF OLIVE OIL IN PAN & ON MEDIUM HEAT, WAIT FOR IT TO SMOKE.
- USING A FORK, DIP THE EGGPLANT INTO THE EGG, THEN BREAD CRMBS & PUT ON A PLATE UNTIL OIL IN PAN HOT ENOUGH TO COOK.
- ****IF YOU PUT FOOD INTO COOL OR COLD OIL, THE FOOD SOAKS UP THE OIL INSTEAD OF THE HOT OIL SEALING IN THE FLAVOR OF WHAT YOU'RE COOKING.
- PUT THE EGGPLANT SLICES INTO THE SMOKING OIL, DO NOT CROWD THE PAN.
- CHECK THE HEAT, MAKE SURE IT'S ABOUT MEDIUM LOW. OTHER WISE YOU WILL BURN YOUR HARD WORK (SEE PHOTO)
- I COOK EACH SIDE FOR ABOUT 3 MINUTES.
- IF YOU'RE WORRIED THAT THERE WON'T BE ENOUGH OIL FOR BOTH SIDES THEN PUT IN EACH SLICE & TURN IT OVER. THEN LET THE SIDE THAT'S DOWN COOK FOR ABOUT 3 MINS.
- WHEN BROWNED, FLIP TO OTHER SIDE & LET IT COOK UNTIL BROWN.
- REMOVE TO A BROWN PAPER BAG COVERED WITH PAPER TOWELS TO DRAIN EXCESS OIL.
- I SPRINKLE A LITTLE SEA SALT ON THE COOKED SLICES.
- WIPE OUT THE FRYING PAN WITH A DRY CLOTH, THEN ADD 4 MORE TABLESPOONS OIL & WAIT FOR IT TO START SMOKING BEFORE YOU ADD EGGPLANT.
- IF YOUR EGGPLANT IS TURNING OUT TO DARK OR BURNING THEN TURN YOUR HEAT DOWN & WIPE OUT THE PAN. THE BURN COLOR WILL TRANSFER TO YOUR NEW BATCH.
- *****NOTE***** NEVER EVER NEVER PUT WATER ANYWHERE NEAR HOT OIL FIRE, FIRE, FIRE!!!
- IF YOU HAVE A GREASE FIRE PUT FLOUR OR BAKING SODA ON IT & GET A LID ON IT IF YOU CAN. DO NOT PUT WATER ON IT AS THIS MAKES IT WORSE.
- ********FIRE EXTINGUISHERS BELONG IN THE KITCHEN, IF YOU DO NOT HAVE ONE-----------GET ONE & LEARN HOW IT WORKS BEFORE YOU NEED IT. PLEASE!!!!!!!!!! OK?!!!
- BACK TO OUR COOKING........
- *****I TAKE A COOKIE TRAY & COVER IT WITH PAPER TOWELS TO PUT THE COOKED SLICES IN THE OVEN (TURNED DOWN TO 150) SO I DON'T EAT ALL THE COOKED SLICES.
- CUT THE MOZZARELLA CHEESE INTO EVEN SLICES
- I PUT OLIVE OIL ON THE BOTTOM OF THE BAKING PAN (I USE A BAKING PAN WITH A LID)
- THEN PUT A LADEL OR A CUP OF THE TOMATO SAUCE OVER THE OIL, SMEAR IT AROUND.
- OVERLAP THE COOKED SLICES OF THE EGGPLANT IN CIRCLES, ENDING IN THE MIDDLE.
- SHAKE THE PARMESAN LIBERALLY OVER THE EGGPLANT.
- THEN LAY THE MOZZARELLA COMPLETELY OVER THE BOTTOM LAYERS.
- LADEL OR POUR THE TOMATO SAUCE SO IT COVERS THE CHEESE.
- LAYER THE EGGPLANT, PARMESAN, MOZZARELLA & TOMATO SAUCE TO FILL BAKING DISH.
- JUST SAVE A LITTLE MOZZARELLA FOR THE TOP.
- I ALSO SPRINKLE A LITTLE OREGANO & BASIL ON TOP BEFORE I COVER & BAKE IN 350 OVEN.
- IF YOU'RE NOT SURE IT'S COOKED THROUGH, STICK A FORK IN THE CENTER FOR A COUNT OF 10, PULL THE FORK OUT. IF THE FORKS COLD, IT'S NOT THOROUGHLY COOKED.
- IF THE FORK IS WARM, THEN IT'S DONE.
- TAKE IT OUT OF THE OVEN & LET IT SIT FOR AT LEAST 15 MINUTES. OTHERWISE IT'S LIKE EATING NAPALM. DELICIOUS BUT HOT, HOT, HOT
