Berry Bars Recipe
The fruit bars are a treat and low calorie. Serve these at a brunch or an ending to a meal. Adapted from Weight WAtcher Magazine 1992. I do not have a photo for this one.

  • Ingredients:
  • Bars:
  • ¾ cup all-purpose flour
  • ¼ cup Sugar
  • ½ tsp. Baking soda
  • 1/8 tsp. Salt
  • 2/3 cup low-fat buttermilk
  • ¾ tsp. Vanilla extract
  • Topping:
  • 1 ½ cups fresh or frozen ( not thawed ) raspberries, blueberries or a mixture of the two
  • 1 Tbs. plus 1 tsp. Sugar
  • 1 tsp. Cornstarch
  • 1 tsp. Grated lemon zest

Directions
  1. 1)Adjust oven racks to divide oven in thirds. Preheat oven to 350. Spray an 8” square baking pan with non-stick cooking spray.
  2. 2)In a small bowl, whisk together flour, sugar, baking soda and salt. Whisk in buttermilk and vanilla. Spread evenly into prepared pan. Distribute berries evenly over batter.
  3. 3)In a small bowl, combine sugar, cornstarch and zest. Sprinkle evenly over berries and bake in upper third of the oven 35-40 minutes, or until golden brown and beginning to pull away from edges of pan. Cool completely on wire rack before cutting into 16 bars.
  4. Serving size: 1 Bar
  5. Calories per serving: 49, Fat: 0, Sodium: 67mg, Carbohydrate: 11g
