How to make it

  • First add sour cream and lime zest in a bowl and stir.
  • Now put this in the refrigerator.
  • Next add butter in a pan over a medium flame.
  • Saute the onion and garlic for approx. 5 min.
  • Now add the sweet potatoes, and chicken stock.
  • Then you can add the cumin, chili flakes and ginger.
  • Now bring this to a boil, then lower to a simmer fo about 15 min.
  • Once potatoes are tender, puree soup.
  • Pour pureed soup back into the pot, whisking in the peanut butter into the soup.
  • You wan to heat this through.
  • Just before serving, stir in lime juice, and salt.
  • Ladle and serve!
