How to make it

  • Cut spines from collard greens but do not cut all the way thru
  • Rinse leaves
  • Cut brisket into 4" long by 2 1/2" thick pieces
  • Chop onion real fine
  • Soak meat and onions in coconut milk for at least 6 hours
  • Wrap meat and onions in leaf starting from the bottom of the leaf and roll like a burrito completely sealing the meat
  • Wrap leaf in tin foil in the same manner
  • Steam for 3 1/2 to 4 hours

    This is a whole new take on corned beef. Thanks for shaking up my comfort zone. I'm fairly sure I've never cooked a Tongan recipe before.
