Squid Luau Using Spinach Recipe
This is an AWESOME side dish on ANY Hawaiian Plate. It's not the most appealing looking dish but, once you taste it.... It is VERY VERY good!!!

Ingredients
  • 2 lbs. Cleaned Calamari
  • 6 lbs spinach
  • 2 TBS hawaiian Salt
  • 1/2 TBS Baking Soda
  • 6 TBS butter
  • 2 Medium diced onions
  • 3 Cups Coconut Milk
  • 1 1/2 tsp regular salt
  • 1 TBS sugar

Directions
  1. Clean and slice squid into rings and set aside
  2. Wash leaves and put in pot w/ 3 cups water
  3. Add Hwn salt and baking soda and bring to a boil
  4. Reduce heat and simmer while partially covered for 1 hour
  5. Drain and squeeze liquid out of leaves
  6. Saute onions and squid in butter untill onions are translucent
  7. Add Coconut milk, cooked leaves, salt and sugar and simmer for 30 minutes
