Microwave Onion Rings Recipe

Ingredients
  • 1 large yellow onion
  • 1 egg
  • 2 tsp olive oil
  • 1/2 dry bread crumbs (seasoned for more flavor if you wish)
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • Salt (to taste)

Directions
  1. Peel "paper" off onion and slice in 1/2" thick slices. When separating into rings, leave two rings for each piece. In a bowl, combine egg and oil, beating well. On a large place, spread bread crumbs (crush more if needed), paprika, and garlic powder, stirring well. Then dip each 2-ring piece first into the egg then both sides on the bread crumbs to coat. Place onion rings on a plate, cover with a piece of paper towel large enough to cover all pieces, and microwave on high for 2 minutes. Check and cook in additional 30 second increments until onion is slightly cooked. Salt to taste, and serve
