How to make it

  • Heat oven to 450 degrees. Mix bread crumbs, pepper and onion flakes and cornmeal. Dip fish in milk. Coat with cornmeal mixture. Place fish in 12 x 9 x 2 inch rectangular pan coated with cooking spray. Pour butter over fish. Bake uncovered until fish flakes very easily with fork, about 17 minutes

    My favorite fish...was able to have some down in Texas on vacation. Back in yankeeland now, and it's much harder to come by...but I'll definitely try this when I get some! ^5

    Oh Lordy Cuz,
    Being a Yank it's hard to lay my hands on catfish. But dang if your recipe didn't start my Southern yen for collard greens & corn pones with some of your Catfish.
    I guess I can always have grits & eggs for breakfast.
