Oven Fried Catfish Recipe

Ingredients

4 catfish, about 6 oz. each

1/4 c. yellow cornmeal

1/4 c. dry bread crumbs

1/4 tsp. black pepper

1 tbsp. onion flakes

1/2 c. skim milk

2 tbsp. melted butter

1 tsp Onion Powder

1 tsp Garlic Powder

Vegetable cooking spray

Directions

Heat oven to 450 degrees. Mix bread crumbs, pepper and onion flakes and cornmeal. Dip fish in milk. Coat with cornmeal mixture. Place fish in 12 x 9 x 2 inch rectangular pan coated with cooking spray. Pour butter over fish. Bake uncovered until fish flakes very easily with fork, about 17 minutes

Being a Yank it's hard to lay my hands on catfish. But dang if your recipe didn't start my Southern yen for collard greens & corn pones with some of your Catfish.
