OVEN FRIED CATFISH

I made this the other night and it was so tasty and good!!
Ingredients
- 4 catfish, about 6 oz. each shopping list
- 1/4 c. yellow cornmeal shopping list
- 1/4 c. dry bread crumbs shopping list
- 1/4 tsp. black pepper shopping list
- 1 tbsp. onion flakes shopping list
- 1/2 c. skim milk shopping list
- 2 tbsp. melted butter shopping list
- 1 tsp onion powder shopping list
- 1 tsp garlic powder shopping list
- vegetable cooking spray shopping list
How to make it
- Heat oven to 450 degrees. Mix bread crumbs, pepper and onion flakes and cornmeal. Dip fish in milk. Coat with cornmeal mixture. Place fish in 12 x 9 x 2 inch rectangular pan coated with cooking spray. Pour butter over fish. Bake uncovered until fish flakes very easily with fork, about 17 minutes

I buy catfish so seldom, but this would be the way I would want to cook it. Again thanks for the great post!

My favorite fish...was able to have some down in Texas on vacation. Back in yankeeland now, and it's much harder to come by...but I'll definitely try this when I get some! ^5
