How to make it

  • Press the tofu with a weight for half an hour to remove water.
  • Slice the tofu into half inch cubes and fry in very hot oil for 30 seconds (you could boil it briefly if you want to avoid the oil).
  • Remove all but 3 T oil in the wok, reheat, and fry the ground pork well.
  • Add garlic, hot bean paste, soy sauce, salt, stock, and bean curd. Boil for 3 minutes.
  • Thicken with corn starch paste, then sprinkle with sesame oil and pepper.
