Ma Po Tofu Recipe
A spicy dish of tofu and meat perfect for serving with rice.

Ingredients
  • 1 Block firm tofu
  • 1/4-1/2 lb ground pork or beef
  • 1 t chopped garlic
  • 1 T chopped green onion
  • 1 T hot soy bean paste
  • 1 t pepper
  • 2 T soy sauce
  • 1 t salt
  • 2 t cornstarch and 2 t water to make a paste
  • 1 C stock
  • 1 t sesame oil
  • Oil for frying

Directions
  1. Press the tofu with a weight for half an hour to remove water.
  2. Slice the tofu into half inch cubes and fry in very hot oil for 30 seconds (you could boil it briefly if you want to avoid the oil).
  3. Remove all but 3 T oil in the wok, reheat, and fry the ground pork well.
  4. Add garlic, hot bean paste, soy sauce, salt, stock, and bean curd. Boil for 3 minutes.
  5. Thicken with corn starch paste, then sprinkle with sesame oil and pepper.
