This has become a family favorite after I was in a rush to throw something together for dinner and had limited ingredients.

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 can diced tomatoes
  • 1/2 cup of your favorite italian salad dressing (I use Tuscan House Italian dressing)
  • 1/2 cup shredded mozzerella cheese

Directions
  1. Preheat oven to 350° F
  2. Grease a glass casserole dish with nonstick spray
  3. Pour some of the dressing on the bottom of the pan just until covered
  4. Place chicken breasts in pan
  5. Pour remaining dressing over chicken
  6. Top with diced tomatoes
  7. Cover with aluminum foil and bake for 20 minutes
  8. Uncover and sprinkle with cheese and bake for 20-25 more minutes until chicken is no longer pink in the middle.
  9. Serve over your favorite pasta (I use whole grain rotini)
