Chicken And Spinach Tortilla Bake Recipe

  • 1 Tbs olive oil
  • 4 chicken cutlets(about 1lb)
  • salt and pepper
  • 1-1/2 c store bought sasa verde
  • 3/4 c ricotta cheese
  • 4 lg. flour tortillas,cut in wedges
  • 1/2 red onion,thinly sliced
  • 3 c baby spinach (about 1/4 lb.)
  • 2 c shredded pepper jack cheese

Directions
  1. Preheat oven to 450 degrees. In large skillet,heat olive oil over med-high heat. Season the chicken with salt and pepper,add to the pan and cook,turning once,until cooked through,about 5 mins.
  2. Let cool and shred the meat.
  3. Whisk together the salsa verde and ricotta;season with salt and pepper.
  4. In a greased 9" square baking dish,layer 1/3 of salsa mixture,tortillas,chicken,onion,spinach and pepper jack;repeat twice. Bake until golden-brown,15 to 20 mins. Let stand for 10 mins before serving.
