PEPPERMINT SANDWICH COOKIES

Peppermint flavored chocolate coating transforms crackers to Peppermint covered sandwiches. This is adapted from the Quick Cooking magazine of 2002. Originaly post by Melissa Thompson
Ingredients
- Ingredients: shopping list
- 1 can ( 16-oz ) vanilla frosting shopping list
- ½ tsp. peppermint extract shopping list
- 3 to 5 drops of green food coloring shopping list
- 72 butter-flavored crackers ( Ritz crackers ) shopping list
- 1 Lb. dark chocolate candy coating, coarsely chopped shopping list
How to make it
- In a bowl, combine the frosting, extract and food coloring if desired. Spread over half of the crackers; top with remaining crackers. Place candy coating in a microwave-safe bowl. Microwave on high for 1 – 2 minutes or until smoth. Dip the cookies in coating. Place on waxed paper until chocolate is completely set. Store in an air tight container at room temperature.
