How to make it

  • boil sliced potatos until soft but not breaking apart
  • drain potatos
  • heat fry pan and throw in onion, then kale
  • after kale has started to reduce down in size, add in potato and fry for a couple of minutes
  • meanwhile, mix milk, eggs, herbs and salt and pepper. beat.
  • then add kale, potato and onion mixture and mix
  • pour into pan on stovetop. i used my le creuset skillet which i oiled.
  • cook on stovetop until egg nearly set.
  • sprinkle shaved parmesan
  • put into oven or under grill for about 5 minutes until set and lightly browned on top
  • if you oiled the pan well enough, it should come right out.
  • i served with green salad (the leaves growing in the backyard were all i had), sprinkled with pinenuts and drizzled with balsamic vinegar and some olive oil.
  • enjoy!
