I made this tonight because we hadn't had time to go grocery shopping all week. we had plenty of eggs from our chickens in the backyard. the only other things i had were kale and some lovely dutch cream potatos from the farmer's market and whatever... More

Ingredients
  • 450g potato (i used dutch cream) sliced
  • 1 brown onion (diced)
  • 100g kale
  • 7 beaten eggs
  • 100 ml milk
  • handful of herbs, i used oregano and parsley and a shake of dried 'lamb herbs'
  • salt and pepper
  • handful of shaved parmesan
  • glug of olive oil (to prevent pan sticking)

Directions
  1. boil sliced potatos until soft but not breaking apart
  2. drain potatos
  3. heat fry pan and throw in onion, then kale
  4. after kale has started to reduce down in size, add in potato and fry for a couple of minutes
  5. meanwhile, mix milk, eggs, herbs and salt and pepper. beat.
  6. then add kale, potato and onion mixture and mix
  7. pour into pan on stovetop. i used my le creuset skillet which i oiled.
  8. cook on stovetop until egg nearly set.
  9. sprinkle shaved parmesan
  10. put into oven or under grill for about 5 minutes until set and lightly browned on top
  11. if you oiled the pan well enough, it should come right out.
  12. i served with green salad (the leaves growing in the backyard were all i had), sprinkled with pinenuts and drizzled with balsamic vinegar and some olive oil.
  13. enjoy!
