Beanage A Trois Salad

- 1 15 oz can organic kidney beans, rinsed and drained shopping list
- 1 15 oz can organic garbanzo beans, rinsed and drained shopping list
- 1/2 lb. fresh green beans, cut into 1 inch pieces shopping list
- 1 medium shallot, minced shopping list
- 1/4 cup fresh, finely chopped flat-leaf parsley shopping list
- 1/3 cup organic red wine vinegar shopping list
- 1 TBSP granulated sugar (or more to taste) shopping list
- 1/4 cup olive oil shopping list
- kosher salt and freshly ground black pepper, to taste shopping list
- fresh lemon juice, to taste shopping list
How to make it
- Steam or blanch green beans for 3-5 minutes. While green beans are cooking, open canned beans, dump into colander and rinse well.
- When green beans are tender-crisp, add them to the beans in colander and rinse immediatley with cold water.
- In a medium bowl, whisk together the vinegar, sugar, olive oil, shallots, parsely, lemon juice, salt, and pepper. Add the beans to the dressing. Toss to coat.
- Chill salad in the refrigerator for several hours, to allow the beans to soak up the flavor of the dressing.
