Slow Cooker Tex Mex Chicken Recipe

Ingredients
  • 1 lb bonelsess skinless chicken breasts cut into 1 inch wide strips
  • 2 Tbsp taco seasoning mix
  • 2 Tbsp Flour
  • 1 each green and red pepper cut into 1 inch wide strips
  • 1 cup frozen corn
  • 1 1/2 cups thick n' chunky salsa ( whatever heat you like)
  • 1 cup mexican style shredded cheese

Directions
  1. toss chicken with seasoning mix and flour in slow cooker.
  2. Stir in remaining ingredients except cheese cover with lid
  3. cook on low for 6 - 8 hrs or on high for 3-4 hours
  4. stir just before serving and top with cheese
  5. I like to serve over hot cooked rice and garnish with a few chopped olives and chopped green onions.
