Light Thumbprint Cookies

- Ingredients: shopping list
- 6 Tbs. butter or margarine, softened shopping list
- ½ cup sugar shopping list
- 1 egg shopping list
- 2 Tbs. canola oil shopping list
- 1 tsp. vanilla extract shopping list
- ¼ tsp. almond extract shopping list
- 1 ½ cups all-purpose flour shopping list
- ¼ cup cornstarch shopping list
- 1 tsp. baking powder shopping list
- ¼ tsp. salt shopping list
- 1 egg white shopping list
- 1/3 cup chopped pecans shopping list
- 7 ½ tsp. Assorted jams ( for less sugar use light or sugar free jams) shopping list
How to make it
- 1)Preheat oven at 350.
- 2)In a mixing bowl, cream butter and sugar. Beat in oil, vanilla and almond extract. Combine the flour, cornstarch, baking powder and salt; stir into creamed mixture. Roll into 1-inch balls. In a small bowl, lightly beat egg white. Dip each ball halfway into egg white, then into pecans.
- 3)Place nut side up 2-inches apart on baking sheets coated with non-stick cooking spray. Using the end of a wooden spoon handle, make an indentation in the center of each. Bake at 350 for 8 – 10 minutes or until the edges are lightly browned. Remove to wire racks . Fill each cookies with ¼ tsp. Jam; cool.
