Sailing Eggplants With Rice

- 2/3 cup of brown basmati rice shopping list
- 2 eggplants,halved lengthwise shopping list
- 1 small onion chopped shopping list
- 2 garlic cloves,crushed shopping list
- 1 small green pepper shopping list
- 4 oz.mushrooms/sliced. shopping list
- 3 tbls. olive oil shopping list
- 3 oz. chedder cheese,grated. shopping list
- 1 beaten egg. shopping list
- 1/2 tsp. marjoram shopping list
- salt/pepper shopping list
- 2 tbsp. hazelnuts,chopped. shopping list
How to make it
- Cook the rice according to the box directions.,drain and cool.
- Scoop flesh from eggplant,and then chop.
- Blanch the shells in boiling water for 2 minutes and drain upside down.
- Fry the eggplant flesh,onion,garlic,peppers,and the mushrooms in the oil about 5 minutes.
- Mix in the rice,cheese,egg,marjoram,and seasoning.
- Arrange the eggplants in a oven-proof dish.
- Spoon in the filling.
- Sprinkle over the nuts.
- Chill,till ready to bake it.
- Pre=heat oven:375 degrees,and bake about 25 minutes.
