Ingredients
  • 1 eggplant
  • 1 white onion
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Peel eggplant and dice it and sliced onion into salted boiling water. Cook for 20 minutes then drain and toss with cheese, salt and pepper.
