Easy Apple Pie Foldover Recipe

Ingredients
  • 1-1/2 c thinly sliced,peeled apples (1-1/2 med.)
  • 1/4 c packed brown sugar
  • 2 Tbs water
  • 1 tsp lemon juice
  • 1 Tbs flour
  • 1 Tbs sugar
  • 1/4 tsp salt
  • 1 Tbs butter
  • 1/2 tsp vanilla
  • 1 refrigerated pie crust (from 15oz. box)
  • 1 egg

Directions
  1. In 2 qt. saucepan, mix apples,brown sugar,1 Tbs of the water and the lemon juice. Cook over med. heat,stirring occasionallly,until bubbly. Reduce heat to low,cover and cook 6 to 8 mins,stirring occasionally until apples are tender.
  2. In small bowl. mix flour,granulated sugar and salt. Gradually stir in to apple mixture,cooking and stirring until mixture thickens.
  3. Meanwhile,heat oven to 375 degrees. Let pie crust stand at room temperature for 15 mins.
  4. Remove crust from pouch;unroll onto ungreased cookie sheet. Spoon cooled fruit evenly over haf of crust to within 1/2" of edge.
  5. In small bowl,beat egg and 1 Tbas water;brush over edge of crust. Fold untopped half over apple mixture;firmly press edge to seal. Flute edge;cut small slits in several places in top crust. Brush top with remaining egg mixture.
  6. Bake 25 to 35 mins. or till crust is golden brown. Serve warm or cool.
