These spicy cookies always remind me of fall. They are great with a cup of coffee or hot cider.

Ingredients
  • 1 1/3 cups shortening ; melted
  • 2 cups sugar
  • 1/2 cup molasses
  • 2 eggs
  • 4 1/2 cups flour
  • 3 1/2 teaspoons baking soda
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup sugar ; for coating cookies

Directions
  1. Combine melted shortening, 2 cups sugar and molasses; add eggs.
  2. Stir together remaining ingredients, then gradually blend into molasses mixture.
  3. Chill in refrigerator.
  4. Scoop out dough using #40 scoop or roll into 1" balls.
  5. Roll in sugar and place on ungreased baking sheets.
  6. Bake at 350 degrees for 11 to 12 minutes. DO NOT OVERBAKE. They should still be puffed and look a little underdone when you take them out, they finish cooking as they cool.
  7. Let stand on baking sheet for a minute, then remove to wire rack to finish cooling.
  8. Makes 4 1/2 dozen cookies.
