  • 10½ oz. goat cheese, room temperature
  • 2 cloves garlic, minced
  • ½ tsp minced fresh thyme
  • 2 Tbs minced fresh parsley
  • 6 Tbs half and half cream
  • ¾ tsp Kosher salt
  • ½ tsp freshly ground black pepper
  • 2 loaves whole grain bread, sliced thinly
  • 1 large hothouse cucumber, unpeeled and sliced thinly

Directions
  1. 1. In large bowl, mix cheeses, spices, half and half, salt and pepper with an electric mixer. Beat on medium speed until well mixed. You can add additional half and half if mixture is too thick.

  3. 3. Press down slightly, trim crusts and cut sandwiches into triangles, thirds, or circles.
