Enchilada Casserole Recipe
This is a quick & easy casserole dish that’s perfect for dinner when unexpected guests arrive.

Ingredients
  • 2 pounds lean ground beef
  • 1 onion, chopped
  • 2 teaspoons cumin
  • 1 can (29 oz.) red enchilada sauce
  • 2 cups Mexican blend cheese
  • Corn tortillas
  • Cilantro, chopped

Directions
  1. Preheat oven to 425 degrees.
  2. In a skillet over medium heat, cook onion, ground beef and cumin until beef if fully browned. Drain grease. Stir in 1 cup of enhilada sauce. Turn off heat; set aside.
  3. Arrange tortilla’s in the bottom of a cassrole dish, overlapping to fit. Sprinkle some of the cheese evenly over the tortillas, then top with some of the beef mixture and then some of the enchilada sauce, spreading each level evenly. Repeat until casserole dish is filled, ending with a layer of cheese.
  4. Bake for 20 minutes, or until cheese is melted and bubbly.
  5. Sprinkle with chopped cilantro.
