Enchilada Casserole
This was okay. It needed something. I think a can of corn would be good or perhaps refried beans as suggested by another member. Or some garlic. Something. I cut the recipe in half. I found this using the ingredient search - ground beef, enchilada sauce and corn tortillas. Cleaning out the refrigerator and freezer.

Corn would add some flavor. I don't care for / can't handle refried beans so I don't add them to anything. Maybe some chopped green peppers for a little texture?
