Dumplings with Tomatoes and Zucchini

- 1/4 cup chopped onion shopping list
- 2 tablespoons oil shopping list
- 4 large tomatoes; chopped shopping list
- 1 tablespoon minced fresh basil or 1 teaspoon dried basil shopping list
- 1 teaspoon sugar shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 2 medium zucchini; peeled and cubed shopping list
- Parmesan Dumplings: shopping list
- 1 egg; lightly beaten shopping list
- 1 cup grated parmesan cheese shopping list
How to make it
- Saute onion until tender. Add tomatoes, basil, sugar, salt and pepper. Cover; simmer 20 minutes. Add zucchini and continue to cook until tender, about 15 minutes. Combine eggs and cheese. Drop by tablespoonfuls onto tomatoes. Cover; simmer until dumplings are firm, about 5 minutes.
