BROWNIE CAKE WITH RASPBERRY GLAZE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Waxahachie, Texas in 1994.

Ingredients
  • 2 ounces unsweetened chocolate broken up
  • 1/2 cup butter cut up
  • 1 cup sugar
  • 1/3 cup flour
  • 1/4 teaspoon baking powder
  • 2 eggs beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup coarsely chopped walnuts
  • 3/4 cup fresh raspberries for topping
  • Raspberry Glaze:
  • 1 pint raspberries
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon crème de cassis

Directions
  1. Preheat oven to 350.
  2. In small pan over low heat melt chocolate with butter stirring often then let cool slightly.
  3. In another bowl mix sugar, flour and baking powder.
  4. Stir in eggs and chocolate mixture.
  5. Add vanilla and nuts and stir well then pour into well oiled and floured 9-inch pie plate.
  6. Bake for 30 minutes and allow to cool slightly on wire rack.
  7. Invert on cake plate and let cool completely.
  8. About 1 hour before serving spread glaze on top then arrange raspberries over top.
  9. To make glaze puree raspberries in blender then place puree in fine mesh sieve.
  10. Using a spatula force through pulp and discard seeds.
  11. Transfer pulp to a small pan and add sugar.
  12. In a small bowl or cup stir together cornstarch and water and stir into pan.
  13. Bring to boil and stir until sauce is clear and slightly thick then remove from heat.
  14. Cool slightly then add lemon juice and crème de cassis.
