How to make it

  • Dice the chicken and mix with the mustard, mayonaise, and pine nuts.
  • Blanch the sweet bell pepper and then dice and add to the chicken mixture.
  • Shred the spinach and add to the chicken mixture.
  • Put two heaping spoonfuls of the mix on one end of a tortilla and roll up burrito style.
  • Repeat until all gone.
  • Spray PAM in the glass baking pan and place burritos in. I use two but however many you have. Top with shredded cheddar cheese.
  • Bake at 350 30 -40 minutes until cheese is brown and bubbly.
