Mediterranean Chicken Enchiladas Recipe
I needed to put my little bits of left over chicken to work. You can really stretch 1 whole chicken breast when combining with lots of yummy veggies and sauce.

Ingredients
  • 1 whole chicken breast cooked
  • 1/2 cup Stone ground mustard
  • 1/4 cup reduced fat mayonaise
  • 1 sweet bell pepper
  • 6 oz fresh spinach
  • 6 dried apricots
  • 1/4 cup pine nuts
  • 1 cup shredded cheddar cheese
  • 8 tortilla, low carb low fat

Directions
  1. Dice the chicken and mix with the mustard, mayonaise, and pine nuts.
  2. Blanch the sweet bell pepper and then dice and add to the chicken mixture.
  3. Shred the spinach and add to the chicken mixture.
  4. Put two heaping spoonfuls of the mix on one end of a tortilla and roll up burrito style.
  5. Repeat until all gone.
  6. Spray PAM in the glass baking pan and place burritos in. I use two but however many you have. Top with shredded cheddar cheese.
  7. Bake at 350 30 -40 minutes until cheese is brown and bubbly.
