Mediterranean Chicken Enchiladas

- 1 whole chicken breast cooked shopping list
- 1/2 cup stone ground mustard shopping list
- 1/4 cup reduced fat mayonaise shopping list
- 1 sweet bell pepper shopping list
- 6 oz fresh spinach shopping list
- 6 dried apricots shopping list
- 1/4 cup pine nuts shopping list
- 1 cup shredded cheddar cheese shopping list
- 8 tortilla, low carb low fat shopping list
How to make it
- Dice the chicken and mix with the mustard, mayonaise, and pine nuts.
- Blanch the sweet bell pepper and then dice and add to the chicken mixture.
- Shred the spinach and add to the chicken mixture.
- Put two heaping spoonfuls of the mix on one end of a tortilla and roll up burrito style.
- Repeat until all gone.
- Spray PAM in the glass baking pan and place burritos in. I use two but however many you have. Top with shredded cheddar cheese.
- Bake at 350 30 -40 minutes until cheese is brown and bubbly.
