Italian Rollatini

- 2 medium eggplant, each sliced lengthwise into 6 slices about 1/4-inch thick shopping list
- 3 Tbsp extra virgin olive oil, divided shopping list
- salt and ground black pepper shopping list
- 3/4 lb italian sausage, casings removed shopping list
- 1 1/2 cups mozzarella, shredded shopping list
- 1/2 cup parmesan cheese, plus additional for sprinkling shopping list
- 2 cups prepared tomato sauce shopping list
- 1/4 cup basil leaves, torn shopping list
How to make it
- Lay eggplant slices out on a baking sheet, drizzle with olive oil on both sides and season with salt and ground pepper.
- Roast in a 400 degree oven for about15 minutes, flipping halfway through, until eggplant is tender and golden brown. Remove from oven and let cool.
- While eggplant is roasting, in a medium skillet with brown sausage in olive oil, for about 5 minutes, breaking it up with a wooden spoon. Remove from skillet with a slotted spoon and let cool in a medium bowl.
- Mix mozzarella and Parmesan into sausage.
- Spread a little tomato sauce on the bottom of a baking dish and sprinkle with torn basil.
- Lay 2 pieces of roasted eggplant lengthwise on a cutting board, overlapping about an inch. Mound some sausage-cheese mixture at the short end of the eggplant slices. Roll it up and lay seam-side down on top of the sauce in the baking dish.
- Repeat with the rest of the eggplant, there should be six of them.
- Spoon more sauce over the top of the rolls and sprinkle with Parmesan cheese.
- Bake 15 minutes, until eggplant is warmed through and cheese is bubbling.
