How to make it

  • Grease bottom and only 1/2-inch up sides of a 10 x 5 x 3-inch loaf pan; set aside.
  • Combine flour, baking powder, soda, salt , cinnamon and nutmeg. Make well in center of dry mixture.
  • Set aside.
  • Combine eggs, bananas, sugar, oil, and lemon peel.
  • Add egg mixture all at once to dry mixture.
  • Stir until moistened (do not overmix).
  • Batter should be lumpy.
  • Fold in nuts.
  • Spoon batter into prepared pan.
  • Bake in pre-heated 350 degree oven 55 to 65 minutes or until a wooden pick inserted near center comes out clean.
  • (If necessary, cover with foil for last fifteen minutes of baking to prevent overbrowning).
  • Cool in pan on wire rack for ten minutes.
  • Remove from pan.
  • Cool completely on wire rack .
  • Wrap and store over night at room temperature before slicing and serving.
  • Streusel Topping
  • Prepare as above, EXCEPT combine 1/3 cup packed brown sugar and 1/4 cup all-purpose flour.
  • Using a pastry blender, cut 2 tablespoons cold unsalted butter until mixture resembles coarse crumbs.
  • (This must be of sprinkling consistency).
  • Stir in 1/4 cup of finely chopped walnuts.
  • Sprinkle over batter before baking.
