How to make it

  • Sear cubed chuck roast in skillet.
  • Add Ro-Tel tomatoes, green chilies and water.
  • Stir in cumin, paprika, salt, dried onion, dried garlic and chili powder. Add two or three smidgens of red pepper to taste.
  • Cover skillet and simmer for about 30–35 minutes.
  • Mix about ¼ cup of good masa (corn dough) with ¼ cup of warm water into a pourable mixture and add to chili.
  • Simmer an additional 15–20 minutes.
