Neal Mccoys Tailgate Chili

- 2 lbs. chuck roast, cut into shopping list
- 1-inch cubes shopping list
- 1 10-oz. can Ro-Tel tomatoes shopping list
- green chilies, to taste shopping list
- 2 cans water shopping list
- 1 tbsp. cumin shopping list
- 1 tbsp. paprika shopping list
- 1 tsp. salt shopping list
- 1 tbsp. dried onion shopping list
- 1 tbsp. dried garlic shopping list
- 1/3 cup chili powder shopping list
- Masa (corn dough) shopping list
How to make it
- Sear cubed chuck roast in skillet.
- Add Ro-Tel tomatoes, green chilies and water.
- Stir in cumin, paprika, salt, dried onion, dried garlic and chili powder. Add two or three smidgens of red pepper to taste.
- Cover skillet and simmer for about 30–35 minutes.
- Mix about ¼ cup of good masa (corn dough) with ¼ cup of warm water into a pourable mixture and add to chili.
- Simmer an additional 15–20 minutes.
