Clash of the Seasons Quickbread

- 2 1/3 cups roasted Sweets and apple butter (or pumpkin pie *filling* - not pure pumpkin) shopping list
- 1/2 cup sugar shopping list
- 1 egg shopping list
- 1 tbsp vanilla shopping list
- 1 tbsp ground flaxseed shopping list
- 1/2 cup 1% milk shopping list
- 1 cup flour shopping list
- 1/2 cup whole wheat flour shopping list
- 1/2 cup rolled oats (not instant or quick cooking) shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 3/4 cup fresh blueberries shopping list
- 1/3 cup sliced fresh strawberries shopping list
How to make it
- Preheat oven to 375F, lightly grease a loaf pan.
- In a large bowl, beat together butter or pumpkin pie filling, sugar, egg, vanilla, flaxseed and milk. Set aside.
- In another bowl whisk together flours, oats, baking powder and baking soda
- Gently fold into the wet ingredients, stirring until just moistened.
- Fold in berries and stir just until combined.
- Bake 30 minutes, then turn the oven down to 350F and bake a further 20 minutes.
- Cool in pan 20 minutes before turning out onto a rack and cooling completely.
