These are my favorite gluten-free appetizer scones, very easy to put together and fast to bake.

  • 2 cups gluten free bread mix
  • (my favorite is gluten-free bread mix "dr. Schàr", it
  • already has xantan gum in)
  • 2 tsp quick raising yeast (gf)
  • 1/2 tsp salt
  • 1/4 tsp saffron powder
  • 1 tsp dry rosemary
  • 1/3 tsp garlic powder
  • 1/4 tsp baking soda
  • 80 g vegetable margarine
  • 1 egg
  • 1/4 cup rice milk
  • sea salt
  • if the flour blend you use doesn't contain the xantan gum, add 2 tsp of it

Directions
  1. Turn on the oven to 200°C/400°F.
  2. In a small mixing bowl whisk together 1 tbsp rice milk with the rosemary, garlic powder and saffron, set aside.
  3. Line a baking tray with a baking paper, set aside.
  4. In a large mixing bowl combine the flour with the quick rising yeast, the salt and the baking soda.
  5. Add the margarine into the flour mixture and mix well with your hands until it's crumbly. Make a well in the center and break in the egg. Whisk lightly with a fork. Add the milk and whisk again. Then stir all with a wooden spoon. Once all ingredients are combined, start to knead with your hands. Knead until dough is ellastic and not sticky. Sprinkle with some flour if neccessay. If dough is too dry add 1-2 tbsp rice milk.
  6. When you reach a soft dough, place it onto the prepared baking try. Flat dough with your hands into a 1,5 cm thin crust.
  7. With a knife, cut in Cross, then cut each piece in half to the long part.
  8. Brush very lightly with the prepared spice.milk mixture. Sprinkle with sea salt.
  9. Bake in the preheated oven 10 to 12 minutes.
  10. Cool 4 minutes on a wire rack, then serve warm. I like these with cooked ham and vegan "Sheese" mozzarella.
  11. Optional, you can add shredded provolone cheese into the dough after the egg-milk mixture to have cheesey spicy scones.
