Baked Chocolate Pudding

- 45g best-quality chocolate (70% cocoa solids) shopping list
- 50ml hot espresso or good strong instant coffee shopping list
- 125g butter, plus extra for greasing shopping list
- 6 eggs, free-range or organic, separated shopping list
- 200g caster sugar shopping list
- 100g ground almonds shopping list
- 100g rice flour shopping list
- 1 small handful chopped hazelnuts, toasted shopping list
How to make it
- Melt 125g chocolate with coffee, then pur into small ice-cube moulds and freeze until hard.
- Grease 6 ramikin dishes or 3inch pastry rings well with some butter
- Place in the fridge while you make your sponge mixture
- elt the ramaining chocolate with the butter in a bowl over a pan of boiling water,, then in a separate bowlwhisk the egg wihites with the sugar until firm.
- Fold the yolks into the cooled chocolate and butter mixture, then add the almons and flour
- Finish by carefully folding in the egg white mixture.
- Preheat the oven to 190 C/375 F/gas 5.
- Take your moulds out ofthe fridge and spoon a little mixture into each one, then push in a cube of the frozen coffee and chocolate mixture.
- Cover with the rest of the sponge mixture so each ice cube is completely enveloped.
- Bake in the prehaeated oven for about 18-20 mins
- Then remove carefully from he moulds while hot.
- Serve immediately sprinkledwith hazelnuts. Goes lovely with Vanilla Ice Cream...Enjoy
