Baked Chocolate Pudding Recipe
This pudding is Chocolate heaven! The original recipe idea for it came from a chef. I've changed it round a bit to make it easier to make at home.

Ingredients
  • 45g best-quality chocolate (70% cocoa solids)
  • 50ml hot espresso or good strong instant coffee
  • 125g butter, plus extra for greasing
  • 6 eggs, free-range or organic, separated
  • 200g caster sugar
  • 100g ground almonds
  • 100g rice flour
  • 1 small handful chopped hazelnuts, toasted

Directions
  1. Melt 125g chocolate with coffee, then pur into small ice-cube moulds and freeze until hard.
  2. Grease 6 ramikin dishes or 3inch pastry rings well with some butter
  3. Place in the fridge while you make your sponge mixture
  4. elt the ramaining chocolate with the butter in a bowl over a pan of boiling water,, then in a separate bowlwhisk the egg wihites with the sugar until firm.
  5. Fold the yolks into the cooled chocolate and butter mixture, then add the almons and flour
  6. Finish by carefully folding in the egg white mixture.
  7. Preheat the oven to 190 C/375 F/gas 5.
  8. Take your moulds out ofthe fridge and spoon a little mixture into each one, then push in a cube of the frozen coffee and chocolate mixture.
  9. Cover with the rest of the sponge mixture so each ice cube is completely enveloped.
  10. Bake in the prehaeated oven for about 18-20 mins
  11. Then remove carefully from he moulds while hot.
  12. Serve immediately sprinkledwith hazelnuts. Goes lovely with Vanilla Ice Cream...Enjoy
