Tasty Courgette Bake Recipe
This dish will be ready in 55 mins with little preparation time. Serve with loads garlic bread!! Delicious. Courgettes are also know as Zucchini or the American plural Zucchinis

Ingredients
  • 11/2 lbs courgettes, sliced (or about a kilo)(Zucchini)
  • 1 packet streaky bacon, chopped
  • 1 medium onion, sliced
  • 3 eggs
  • 1/2 pint fresh milk
  • 1/2 teaspoon dried marjoram
  • 4 ozs cheddar, grated

Directions
  1. Pour a boiling kettle over the sliced courgettes and leave until needed
  2. Place bacon & onion in pan, cook, stirring until done
  3. Lightly grease a large ovenproof dish. Place drained courgettes, bacon and onion in the dish.
  4. Beat together the eggs, milk and herbs. Stir in 75g (3ozs cheese) and pour over courgettes.
  5. Sprinkle with remaining cheese.
  6. Bake at 180 deg C (350F) Mark 4 for 55 minutes until set. Serve with garlic bread.

I had to look up the definition of a Courgette and this is what I learned: It is the British, and particularly the New Zealand name for zucchinis. People in the UK may refer to courgettes as vegetable marrows. Thanks for the post.
