Ingredients
  • 11/2 lb large shrimp peeled & deveined
  • 1 tsp adobo seasoning
  • 3 tbls olive oil
  • 2 cups fine chopped onion
  • 3 chopped scallions chopped
  • 3 cl;oves minced garlic
  • 1/2 cup tomato sauce
  • 1 cup clam juice
  • 1 can coconut milk (13.5oz)
  • 4 cups rice

Directions
  1. Season shrimp adobo set aside.In skillet add oil bring to med heat.Add onions ,scallionsand garlic cook until translucent.Stir in tomato sauce cook for 5 min..Stir in clam juice,coconut milk and bring to boil.Cook for 5 min. .Add shrimp cook for 5 min.Serve on platter with rice .Garnish with chopped scallions.
