Cockles In A Cataplana Pan

- 2 1/2 lb cockles shopping list
- 4 oz smoked ham or lean bacon shopping list
- 1 tblsp olive oil shopping list
- 1 tblsp lard shopping list
- 2 sprigs parsley shopping list
- pinch paprika shopping list
- 1 tblsp tomato paste shopping list
- 2 small red chillies (optional) shopping list
- sal shopping list
- 1 lemon, cut into segments shopping list
How to make it
- Wash the cockles and leave in salted water for half a day. Then wash again.
- Fry the onion in thin slices very gently in the fat and oil in the pot, until transparent, together with the seasoning and tomato paste. Add the smoked ham in small cubes, the cockles and parsley.
- Cover and cook gently for 20-25 minutes.
- Serve adorned with the lemon.
