A Cataplana is a special vessel made of copper which interlocks perfectly permitting a complete turning. A good saucepan with a tight-fitting lid will do when a cataplana is not available. This is a perfect starter.

Ingredients
  • 2 1/2 lb cockles
  • 4 oz smoked ham or lean bacon
  • 1 tblsp olive oil
  • 1 tblsp lard
  • 2 sprigs parsley
  • pinch paprika
  • 1 tblsp tomato paste
  • 2 small red chillies (optional)
  • sal
  • 1 lemon, cut into segments

Directions
  1. Wash the cockles and leave in salted water for half a day. Then wash again.
  2. Fry the onion in thin slices very gently in the fat and oil in the pot, until transparent, together with the seasoning and tomato paste. Add the smoked ham in small cubes, the cockles and parsley.
  3. Cover and cook gently for 20-25 minutes.
  4. Serve adorned with the lemon.
