Bacon Tomato cups

- One recipe double pie crust or one pkg prepared pie crusts shopping list
- One lb. bacon, cooked shopping list
- 2 med tomatoes, chopped, juice, seeds, and all shopping list
- one small onion, chopped shopping list
- Five oz shredded swiss cheese shopping list
- 1/2 cup mayo shopping list
How to make it
- Roll out pie crust and cut 24 2 3/4" rounds. Press each round into a mini muffin tin pan which has been sprayed with olive oil cooking spray
- Crumble cooked bacon and combine with chopped tomatoes, onions, shredded cheese, and mayo.
- Stir until well mixed and spoon into pastry lined muffin tins.
- Bake for 12 minutes at 375 degrees
- Cool for 10 min. and remove from mini muffin tins.
- Serve warm
