Fall Fruit Individual Crostadas Recipe
I have done whole crostadas but not individual. Nice idea done on the Rachael Ray show.

Ingredients
  • 2 Empire or Honey croisp aples,peeled and sliced
  • 1/4 c dried sweetened cranberries
  • 2 slightly under-ripe brown-skinned pears,peeled and thinly sliced
  • 2 tsp lemon juice
  • 1 Tbs cornstarch
  • 3 Tbs brown sugar
  • 1/4 tsp cinnamon
  • a little freshly grated nutmeg
  • a pinch of ground cloves or allspice
  • a pinch of ground ginger
  • a pinch of salt
  • 2 store bought pie crusts
  • a sprinkle of flour
  • 2 Tbs cold butter,cut in small pieces
  • 1 egg,beaten with a splash of cold water.

Directions
  1. Preheat oven to 400. Arrange 2 racks near center of oven.
  2. Combine apples,cranberries,pears in a bowl. Toss with lemon juice,cornstarch,brown sugar,cinnamon,nutmeg,allspice or cloves,ginger and pinch of salt.
  3. Roll dough a bit on lightly floured surface. Cut each pie crust into 4 large wedges. Cover 2 baking sheets with parchment paper and arrange 4 wedgees on each sheet. Arrange 1/8th of the fruit on each wedge. Fold edges of each wedge in about an inch leaving the center of each wedge exposed. Dot exposed fruit with butter. Brushexposed crust with egg wash.
  4. Bake 12-15 mins until golden. Cool 10 mins. Serve warm
