Baked Pasta shells with vegetable tomato sauce

- 200-250g Large pasta shells cooked nearly eldente' but not quite shopping list
- 400ml can of crushed tomatoes shopping list
- two stalks celery medium chopped shopping list
- 1 large carrot grated shopping list
- 1 table spoon of capers shopping list
- 5-6 olives rough chopped shopping list
- little bit of green onion nicely chopped shopping list
- 2 cloves garlic pressed shopping list
- 1/4-1/2 cup mozzarella depending how cheesy you want it. i use 1/4 shopping list
- 1/4 cup Parmesan shopping list
- 1/4 cup bread crumbs shopping list
- fresh basil and parsley just a wee bit 5 basil leaves and a tiny hand full of parsley shopping list
- salt shopping list
- pepper shopping list
- olive oil/cooking oil 1table spoon ish.. shopping list
How to make it
- Cook large pasta shells according to package directions. the ones i use take about 10 minutes till nearly eldente' made by "lancia" their a pretty robust thick noodle.. and take longer to cook.
- Pre heat oven to 400 ish
- While those are cooking get out your baking dish. I use a 10" Pyrex pie plate 1.5" tall.
- I then get chopping my veggies. for the most part i just to a smallish rough chop on everything but the carrots. I'll use a grater on the carrots so they cook faster.
- Open 400ml can of crushed tomatoes in a medium pot medium low temp uncovered. throw in extra 1/4 cup water as well as your veggies, capers, olives and spices to taste. let simmer while the noodles cook. 10 or so minutes
- Preparing your baking dish. I'll usually drizzle a tiny bit of olive oil on the bottom of the pan. along with Rough chopped basil and parsley.
- Stir veggie sauce mix. By this time you'll find it to be very very Chunky! that's exactly what you want.
- When pasta is ready strain well making sure all the water is out of the shells.. throw the pasta shells in to the baking dish. then poor slowly the sauce mixture over top trying to fill the mixture in to the pasta. I'll usualy use a wooden spoon at this point to move it all about until it's flat with the top of the baking dish.
- Next grate the mozzarella over top of the dish trying to cover as best as you can.
- Next up is the Bread crumbs trying to fill in any spots you might have missed with the cheese.
- once the crumbs are down drizzle a bit of olive oil over top. or a friend of mine has an oil sprayer that she uses.. gets great coverage. the oil will make everything golden brown.
- last step grate Parmesan on top filling anymore empty spots with a light over all coverage.
- Pop in the preheated oven 400 ish F for about 20 minutes untill you see the juices boiling around the sides and top golden brown crust.
