Ingredients
  • 5 cups of finely chopped seeded and cored jalapenos (about four pounds)
  • 7 cups sugar
  • 1-1/2 cups cider vinegar
  • 12 oz LIQUID pectin (If pectin comes in 6oz boxes so you will need two boxes)

Directions
  1. Place peppers, sugar, and vinegar in a pot and bring to a full boil. Reduce heat and simmer 10 minutes. Add pectin bring to a boil again for one minute then take off heat.
  2. Fill clean sterilized jars to 1/4” from the rim and securely screw on ring. This need not be canned in a water bath unless the seal doesn’t take.
  3. Uses:
  4. Put on crackers with cream cheese
  5. Serve as a condiment with poultry or pork
  6. Spread on a turkey or pork sandwich
  7. Dilute with wine and use as a glaze on a ham
  8. Dilute and use as a sauce for wings or chicken fingers.
