Fresh Homemade Ricotta Recipe
A recipe for an easy ricotta, takes a little time but you will never find fresher.

Ingredients
  • 2 Qts. of whole milk
  • 1 C. heavy cream
  • 1/2 t. salt
  • 3 T. fresh lemon juice

Directions
  1. Line a large sieve with cheese cloth
  2. slowly bring milk, cream, and salt to a boil in a 6 QT. sauce pan over medium heat stirring occasionally to prevent scorching. reduce to a simmer,add lemon juice and stir constantly till the cheese curdles, about two min.
  3. pour mixture into the sieve over a bowl and let drain for about an hour.discard liquid and store in fridge covered.this will last a couple of days in the fridge.
  4. Enjoy
