Fresh Homemade Ricotta

- 2 Qts. of whole milk shopping list
- 1 C. heavy cream shopping list
- 1/2 t. salt shopping list
- 3 T. fresh lemon juice shopping list
How to make it
- Line a large sieve with cheese cloth
- slowly bring milk, cream, and salt to a boil in a 6 QT. sauce pan over medium heat stirring occasionally to prevent scorching. reduce to a simmer,add lemon juice and stir constantly till the cheese curdles, about two min.
- pour mixture into the sieve over a bowl and let drain for about an hour.discard liquid and store in fridge covered.this will last a couple of days in the fridge.
