Ingredients
  • 3 tablespoons lard or fat
  • 1 pound fresh or frozen okra, cut up (see note)
  • 2 onions, chopped fine
  • 3 clove garlic, minced
  • ½ pound ham, diced
  • 1 (20-ounce) can tomatoes or 4 fresh skinned tomatoes
  • 1 can butterbeans or 1 cup cooked fresh butterbeans
  • 1 can corn kernels
  • 1 tablespoon minced parsley
  • 1 tablespoon minced celery
  • 1 bay leaf, mashed
  • 1 sprig thyme, shredded
  • 4 tablespoons butter
  • ½ teaspoon sugar
  • Salt and pepper, to taste

Directions
  1. Melt the fat in a heavy aluminum pot, add the cut up okra and fry until okra is not ropy.
  2. Add the onions and garlic, fry for 5 minutes. Add the ham and tomatoes and fry 5 minutes.
  3. Add all other ingredients and cook 20-30 minutes over a medium flame.
  4. Note: Be sure to use fresh or frozen okra. Do not use the canned type.
