Okra Succotash

- 3 tablespoons lard or fat shopping list
- 1 pound fresh or frozen okra, cut up (see note) shopping list
- 2 onions, chopped fine shopping list
- 3 clove garlic, minced shopping list
- ½ pound ham, diced shopping list
- 1 (20-ounce) can tomatoes or 4 fresh skinned tomatoes shopping list
- 1 can butterbeans or 1 cup cooked fresh butterbeans shopping list
- 1 can corn kernels shopping list
- 1 tablespoon minced parsley shopping list
- 1 tablespoon minced celery shopping list
- 1 bay leaf, mashed shopping list
- 1 sprig thyme, shredded shopping list
- 4 tablespoons butter shopping list
- ½ teaspoon sugar shopping list
- salt and pepper, to taste shopping list
How to make it
- Melt the fat in a heavy aluminum pot, add the cut up okra and fry until okra is not ropy.
- Add the onions and garlic, fry for 5 minutes. Add the ham and tomatoes and fry 5 minutes.
- Add all other ingredients and cook 20-30 minutes over a medium flame.
- Note: Be sure to use fresh or frozen okra. Do not use the canned type.
