Spicy Potatoes With Tomato Salsa Recipe

Ingredients
  • 2 tbs olive oil
  • 2 Tbs lime juice
  • 1 tsp Tobasco sauce
  • 2 tsp paprika
  • 2 lbs potatoes cut in quarters
  • Salsa:
  • 1 lb cherry tomatoers
  • 2 large green onions chopped
  • 1 tbs olive oil
  • 1 Tbs lime juice
  • fresh parsley, mint or sage leaves chopped
  • salt and pepper to taste

Directions
  1. Preheat oven to 435F
  2. Toss potatoes with remiang ingredients ( except the salsa )
  3. Bake in an even layer until cooked and crispy
  4. Cook 1 hour, turning potatoes halfway theough cooking time
  5. For salsa, combine all
  6. Season with salt and pepper to taste
  7. Serve along side the potatoesa
