Mediterranean Vegetable soup

- 1 large red bell pepper shopping list
- 1 large green bell pepper shopping list
- 1 large onion shopping list
- 1 medium zucchini shopping list
- 3 large carrots shopping list
- 4 large peeled potatoes shopping list
- 4 large cloves garlic minced shopping list
- 1 cup frozen green peas shopping list
- olive oil to saute shopping list
- 2 cups water shopping list
- 1 cup dry white wine shopping list
- 2 cups tomato sauce shopping list
- 2 cups tomato juice shopping list
- chopped basil and parsley shopping list
How to make it
- In large soup pot heat some oil and add coarse cubed carrots, peppers, onions, potatoes and chopped garlic.
- Cook till vegetables are softened.
- Add water, wine, tomato sauce and juice.
- Bring to a boil and reduce heat and simmer until vegetables are almost tender.
- Add coarse chopped unpeeled zucchini and peas and simmer 20 minutes longer.
- Season with salt, pepper and chopped parsley and basil to taste.
- Makes a large pot to serve 10.
