Cold Sesame Noodles Recipe
A great way to get that Chinese restaurant noodle fix.

Ingredients
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1/2 tsp red pepper paste or hot red pepper flakes (to taste)
  • 2 tbsp firmly packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 tbsp sesame oil
  • 1 tsp ginger root (peeled and grated)
  • 1/2 cup chicken broth
  • chopped scallions or cucumber strips (for garnish-optional)

Directions
  1. In a saucepan, combine the soy sauce, vinegar, red pepper, brown sugar, peanut butter, oil, ginger root and broth
  2. Simmer the mixture, stirring until thickened and smooth and let cool slightly.
  3. Cook the noodles, drain and rinse.
  4. Toss noodles with sauce.
  5. Serve at room temperature and garnish with scallion or cucumber
