Cold Sesame Noodles

- 3 tbsp soy sauce shopping list
- 2 tbsp rice vinegar shopping list
- 1/2 tsp red pepper paste or hot red pepper flakes (to taste) shopping list
- 2 tbsp firmly packed brown sugar shopping list
- 1/2 cup creamy peanut butter shopping list
- 1 tbsp sesame oil shopping list
- 1 tsp ginger root (peeled and grated) shopping list
- 1/2 cup chicken broth shopping list
- chopped scallions or cucumber strips (for garnish-optional) shopping list
How to make it
- In a saucepan, combine the soy sauce, vinegar, red pepper, brown sugar, peanut butter, oil, ginger root and broth
- Simmer the mixture, stirring until thickened and smooth and let cool slightly.
- Cook the noodles, drain and rinse.
- Toss noodles with sauce.
- Serve at room temperature and garnish with scallion or cucumber
