How to make it

  • Fry bacon crisp
  • Remove from pan, drain and reserve fat, and crumble bacon
  • Set bacon aside
  • Put 1/4 cup of bacon fat back in the pan and add the four and onions
  • Stir in vinegar, water, sugar, salt ,black pepper, powdered mustard and rosemary
  • Cook to medium thickness...don't over cook!
  • Add to the cooked and drained potatoes
  • Add parsley, arugula, and crumbled bacon
  • Toss carefully with a couple of forks to prevent mashing potatoes
